2011 CNY bakes

This is the 3rd year I'm making this Kueh/ Kek Lapis. Using Richard Goh recipe


Pineapple Tarts a must have for Chinese New Year too. This year I bought Phoon Huat Pineapple filling to try out. Not bad too. There are two type of filling at the shop but was told the $5.05 is nicer.
First time trying out this cornflakes cookies. Easy and yummy. With the help of my 3 rascals I have complete the task quite fast. Only thing is having to clear the mess on the floor thereafter.

Baked this batch of rompers cookeis for my little nephew who celebrated his full month on 18 December. Guess what its the same day as my birthday. I got a little surprise from my cousins cos they have prepared me a present too =) Soooooo happy! Thanks to my cousins!

Children's Day 2010

Baked this batch of fondant cookies for Ashly to bring to school. Hope the children like it =) Cookies recipes from BakingMum. I reduce the sugar to 160gm since I have fondant to go with the cookies and baked at 160c for 24mins

I like this 'Ripple' ice cream most =)

Many flavors~~~Yam, mango, ripple

Remaining dough baked into plain cookies

Recipes for spritz cookies

250gm butter

200g sugar (I reduce to 160c)

2 eggs

650g plain flour + 3/4 tsp baking powder

1/4 tsp salt

Method

1) cream butter and sugar till creamy

2) add one egg at a time

3) add flour

4) cool dough in fridge for abt 30mins

5) Roll and use cookie cutter to cut

6) Baked in pre heat oven 190c for 15mins or golden brown (depending on the thickness of the cookies)

Cookies




Got a tin of Crisco to finish off and decided to try the cookies recipe from Carol's book (Pg 24). Pretty simple and I have added walnuts (30gm) and reduce the amount of sugar (50gm) and chocolate chips (60gm) required. Baked a batch for Ashly's Teacher ~~ Ms Zhang who will be leaving PCF to another school. Wish her all the best! And another batch for Ken & Vel. Thanks to Ken who has been sending me to and back from work during this period. =)


Most likely I will bake this again for this coming Teacher's Day Celebration cos its just so simple and also save me lots of time haha....=)
Recipes (make 12 pcs Temp: 160c for 15mins)
170g cake flour
80g unsalted butter
30g sugar
30g Molasses sugar
1 egg
1/2 T Rum
1/8 t salt
100gm choco chips ( I used only 60gm)
Method
1) Cream butter and sugar & salt till creamy
2) Add egg and rum gradually
3) Add sieved flour by 2 batches. Mix the flour and form a dough
4) Add choco chips (nuts)
5) Make a dough @35gm each and press lightly to @ 0.5cm in thickness
6) Baked and cool before keeping.

CNY goodies

These are the goodies I baked for CNY. First time trying kuek mamuk. I would also like to take this opportunity wishing all my fellow bloggers Happy Chinese New Year! Huat ah!!!!

Pineapple Tart and Almond cookies

Kueh Mamuk

Kueh Lapis. I used Richard's Goh recipe and reduce the overall sugar to 210gm. This recipe can make two 7 inch lapis. Every layer is weighed at 60gm of the batter.
Can you count how many eggs are needed to make the above lapis? Got problem counting the shells??? Count the yolks then haha....

(The shells are not wasted. I have crushed them and used as fertilizer for my orchid! :) )

Flaked Almond Biscuits

When I saw Anncoo post up the recipe and pic of the flaked almond biscuits, I was attracted by it and told myself I must try this for Chinese New Year. I have reduced the sugar by 25gm. But not sure why my crisp is not evenly brown.....the side get burnt and the centre remain white......the biscuit looks bit ugly but the taste is defintely there. Thanks Anncoo for sharing the recipe.

Going NUTS

The baking class @ Serangoon on CNY bakes were rather easy. Use the rubbing in method. For the 1st batch, I follow the recipe strictly. Find the cookies too sweet hence reduced the 2nd batch sugar amount by 20gm and I find it just nice.

C is for Cookies....




Am lousy with decoration. Just hope the teachers will like it.
33: I will post the recipe for the cookies soon.
Recipes for my niece 33:
380gm plain flour
30gm corn flour
1/2 tsp baking soda
250gm butter (Hard butter thaw for 15mins before use)
180gm brown sugar
1 egg
Method
1) Sieve all flour together. set aside
2) cream butter, brown sugar till fluffy. Add in slightly beaten egg and blend well
3) Add (1) into (2) slowly and mix till well combine
4) Put (3) into fridge and set for 30mins before use.
5) Dust some flour on the working top and roll to desire thickness and use cookies cutter to cut. If need be dust cutter with some flour.
6) baked at 180c for 25mins or golden brown.
7) cool on rack before keeping

Lesson: Cookies Decoration Class


Attended the Cookies Decoration Class with Sherynn and her cousin Gwen at Mong's place. Must thanks Sherynn for coordinating and her hubby for fetching us. Enjoyed the lesson and have so much fun with the Royal icing.

Mong did mention that her younger daughter is very strict with the work of her students and not to be disheartened if her girl give any -ve remarks. Towards the end of the lesson, her daughter is back, we asked her if she likes our decorated cookies. Her reply NICE! So ladies 3 cheers for us!
Now am looking for cookies cutter to try out on my own. The Royal Icing (RI) is not so sweet compared to rolled fondant. But the latter is so much easier and neater. Some of the pointers to note when decorating cookies. Thanks Mong for sharing.
1) When preparing RI, the bowl have to be grease free. Used K beater and start from slow to speed 4-5 for abt 3-4 mins till voulme double.
2) After mixing the RI, any unused must be cover with damp cloth to prevent from hardening. It can also be kept in fridge in seal air tight containers. To rewhip simply defrost and whip.
3) To make RI for flooding add water bit by bit to test the consistency. Must do a 10 seconds test i.e the drop down RI should fuse into the RI in the base of cup.
4) To thin add more (2). Too thick add more water
5) Always prepare a slightly wet cloth to cover the RI piping bag to prevent drying.
6) Outline RI movement should be 'Lift and Drop' never DRAG.
7) Any pointed icing esp at joint point can use a lightly wet paint brush to smooth it.
8) Flooding the RI should be in 'Zig Zag' motion.
9) Any air bubble trap can use a pin to pierce it
10) Use corn syrup to stick fondant onto biscuit . Use water/alcohol to stick fondant and fondant
11) Decorated cookies can be kept in air tight container at room temp for abt 5 days.
