Tofu Cheese Cake
A delayed posting on a lesson I took at KB CC. Tofu Cheese cake and mango puding! Not long after the lesson, I have made my very first attempt of the cheese cake. The feedback from my colleague were great! Smooth and silky like the tofu! Best eaten only on the 3rd day!

Banana Chocolate Fudge Cake
Last week, Hub forward an email to me on a a hands on baking workshop at CSC. After much consideration, I decided to sign up the course. This is my first time attending a hands on workshop. Thereat I met Bee Leng(Doris Sister)!
Find the room kind of too small to accommodate 22 pax of students. Equipment wise, students are not brief ahead on how to use. I saw them holding onto a metal bowl and whisk by a KA machine....can you imagine this? I'm so worried that the machine/whisk will get spoilt and students getting injured! Best part I washed a whisk and left it on my table. After I returned to my table, the whisk is no way to be found!!!! I have no idea who took it but at least have the courtesy to ask. The trainer for this workshop is Ms Cheryl. Overall, still enjoy the workshop.
Some of the tips shared by the trainer:
1) Bicarbonate Soda added to melted choco powder to make the cake darker
2) Soaked banana in lemon juice to prevent it from turning dark
3) oil & milk must be hot when adding into the batter. This will resulted in a softer cake
4) if no corn syrup it can be replaced by same amount of honey

Cake Deco Class - Lesson 6 Barbie Doll
Am into the 6th lesson making a dress for Barbie doll. Think i have pushed the doll to much into the cake as a result she looks like she is wearing a maternity dress :( I have spread some blueberry as the filling and placed some cut fondant flowers and paste on the cake. Gave the cake to my neighbour and she commented nice! Happy!

Fondant Cake Decorating Class
This April is a busy month...cos I have also signed up Mong's class on fondant cake decorating. Have always wanted to try out fondant cake but dare not make the first move. Finally signed up the class with Janice and both of us have spend an enjoyable 4 lessons and making new friends. This is my finale cake. Have spend quite some time moulding the roses. Not very well done but still acceptable by me haha..overall am satisfied with my first fondant cake. Still got plenty room for improvement. Btw this is my draft picture for the cake. I have decided to make changes to the colour of the stripes. :)

Cake Decor Class - Lesson 1
The long awaiting cake decorating class with Richard Goh finally started. Thanks to Esther from bake4fun for informing me about this new class and nice meeting Esther in person :) .
Today we were taught the basic way of creaming a cake using butter cream and the use of a single nozzel to come out with different pattern. Next week we will be weaving a basket design. Can't wait for the arrival of next lesson.....
Anyway this is my cake for today's lesson. I completed the cake at home with fresh cut fruits.

Lesson: Cookies Decoration Class
Attended the Cookies Decoration Class with Sherynn and her cousin Gwen at Mong's place. Must thanks Sherynn for coordinating and her hubby for fetching us. Enjoyed the lesson and have so much fun with the Royal icing.
Mong did mention that her younger daughter is very strict with the work of her students and not to be disheartened if her girl give any -ve remarks. Towards the end of the lesson, her daughter is back, we asked her if she likes our decorated cookies. Her reply NICE! So ladies 3 cheers for us!
Now am looking for cookies cutter to try out on my own. The Royal Icing (RI) is not so sweet compared to rolled fondant. But the latter is so much easier and neater. Some of the pointers to note when decorating cookies. Thanks Mong for sharing.
1) When preparing RI, the bowl have to be grease free. Used K beater and start from slow to speed 4-5 for abt 3-4 mins till voulme double.
2) After mixing the RI, any unused must be cover with damp cloth to prevent from hardening. It can also be kept in fridge in seal air tight containers. To rewhip simply defrost and whip.
3) To make RI for flooding add water bit by bit to test the consistency. Must do a 10 seconds test i.e the drop down RI should fuse into the RI in the base of cup.
4) To thin add more (2). Too thick add more water
5) Always prepare a slightly wet cloth to cover the RI piping bag to prevent drying.
6) Outline RI movement should be 'Lift and Drop' never DRAG.
7) Any pointed icing esp at joint point can use a lightly wet paint brush to smooth it.
8) Flooding the RI should be in 'Zig Zag' motion.
9) Any air bubble trap can use a pin to pierce it
10) Use corn syrup to stick fondant onto biscuit . Use water/alcohol to stick fondant and fondant
11) Decorated cookies can be kept in air tight container at room temp for abt 5 days.

This recipes yield 70-80pcs of cookies. Can keep for a month. Tips from 老师:
1) Always use hard butter when making cookies this will result crispiness in cookies.
2) Butter that is UNDER creamed will result in harder cookies and non crispiness
3) Butter that is OVER creamed will result in cookies that is easily breakable
