This is my first attempt on this cake after Cheryl class. I prepared the fudge first thinking that it will take quite some time to set. But guess I should have prepare it when the cake is baking in the oven. The fudge sort of solidify hence make it difficult to spread on the cake. Minus the ugly deco, overall the cake taste great.
I use Cadbury old Gold dark chocolate 70% cocoa. Was at NTUC last week and the brand was having offer at $4.55 (org $5+per block).Managed to grab 3 blocks (2 pcs 70% cocoa & 1 pc original). Saw the same at Metro selling $6 per block.
I have discovered another way to prepare the fudge using gelatin powder instead of gelatin sheet while I was preparing for my Durian Quartet. You can replace it with 2 tsp of gelatin powder by letting it sit in the whipping cream for at least 1 min, Water bath the whipping cream until the gelatin melts then add in the chocolate. I notice you are using the 70% chocolate so there are lesser sugar content, the gelatin powder will give quite a good consistency.

looks delicious, I like anything chocolate :P
The cake looks moist & yummy! How is the taste of cadbury gold? 70% is it bitter or not? I will usually use less than 60% cocoa.
Jess love chocolate 2 =)
DG,the sweetness is jst nice when taken with the sponge cake.
