Fresh Fruits Tart


I like the crust for these fresh fruit tarts. Yummy! Will defintely bake it again but I will need to make the crust thinner. * Ashly insist to be my model =)

Pastry
170g bread flour
170g plain flour
227g butter
76 icing sugar (sieve)
1/2 egg

1) Bring butter to room temperature.
2) Cream butter and icing sugar at high speed till white and smooth
3) add egg and cream till smooth
4) Sieve bread flour and plain flour into mixture and mix till smooth
5) wrap mixture with food cling and refrigerate till chill and not sticky.
6) baked at 180c for abt 15 mins or tart turn golden brown

Custard Cream
250g cold milk
100g instant custard
150g fresh cream

1) Whisk cold milk and instant custard at max speed till thicken
2) whipped cream
3) add instant custard with cream

Some fruits/peaches.

Finishing
100g Apricot gel with 80ml water. Brush on fruits

Fruit Pastry Cake

Finally try out this Fruit Pastry Cake. I see many good reviews on this cake including my baking pal Esther. The recipe can be obtained from Happy Home Baking. The colours of the fruits really make the cake so appealing! I have baked 2 of these cake for my 5th & 6th uncles. Hope they like it.

* These are using 1 1/2 times of the recipes.

Totoro Durian Cream Puff

Thanks to my niece 33 for showing me this cute little Totoro. Too cute not to bake right? Anyway 33 is only in her Secondary 3 and have great interest in baking. So am sure she has the potential to be a good baker one day! 加油哦33!

Back to the puff, I did not follow the above recipe. Instead I tried using My-Sweet-Kitchen durian cream puff recipe. For baking temperature I used 200c for 23mins. I should have increase the baking time for another few mins as I noticed the inner part of the pastry is still not well baked. The pastry shrink when it cool down and its not puffy. Hence as a result I have difficulty filling in the cream. Nonetheless, this puff is cute! Think still got room for improvement to get close to the creator Totoro.

Marathon???

Yeah.....defintely its not the marathon I'm referring to. Don't think I'm fit to go for it either. Well, I started the day making jelly barbie doll followed by Quiche and then Pizza. As if I'm preparing for some event. Nope.....I'm just trying to finish not all but most of the ingredients in the fridge. Its tiring but yet fulfilling cos the rascals enjoyed eating it.

Ham & Mushroom Quiche. This time round, I stick to Richard's recipe for the pastry and uses the filling recipe from a fellow blogger Bake 4 fun . Thanks Esther for her recipe. At least I can eat with less guilt cos it uses only 2 eggs.



Last but not least Pizza. I follow the dough recipe from 孟老师的100道面包. Yum Yum!

Ham & Mushroom Quiche


Have 3 boxes of dairy whipping cream left in the fridge. Hence decided to make quiche. Morning bought all the ingredients including the Edam cheese from Giant. Took out Richard's recipe book and realised recipe call for 6 eggs yolks. I think its too much so I reduce it to 5 nos. Anyway got to improve on the rolling of pastry cos during the baking process. I noticed the pastry sought of shrink. Not sure what steps I have miss out.
Now am left with 5 egg whites. Cracking my head what to do with this? Zebra cake? Macarons......
