Fried Asparagus & Sausage Eggs


I found the recipe from mitong's blog and got attracted by the colour of this dish. My rascals don't like to take vegetables as such I must find my way to include vegetables into my dishes. I though this would be a good idea since they will have difficulty taking out the asparagus. Guess what it was well received by them.
Fried Asparagus & Sausage Eggs
Ingredients
4 eggs
2 sausages
some asparagus
salt to taste
dash of pepper
Method
1) Lightly boil the asparagus and sausages
2) Cut the sausages into 4 stripes
3) Beat the eggs and pour half the amount to the frying pan
4) Pan fry on the base and arrange the cut sausages & asparagus alternatively.
5) Pour in the remaining eggs and cover the pan
6) Flip the eggs over and pan fry till golden brown

Easy Shepherd's Pie


Got the recipes from KC. The kids love it. Its really easy. Do give it a try!!I used mashed potatoes powder bought from Malaysia and add fresh milk to replace the water.

A Banana chiffon cake that is finally BROWN


I have baked several chiffon cakes but all the sides are not brown. So when I see this cake...I'm so happy with it. I used another recipe and made some alteration.
Banana Chiffon Cake
Yield a 23cm/25cm tube pan. Bake @ 170c @ 45mins
Set (A)
6 eggs yolks
55gm sugar
1/4 tsp salt
40gm milk
35gm oil
230gm smashed banana
1/2 tsp Lemon juice
drops of banana essence (optional)
Set (B) Sieved together twice
180gm plain flour
1 tsp baking powder
1/8 tsp baking soda
Set (C)
6 egg whites
55gm sugar
1/2 tsp cream of tartar (Optional )
Method
1) Using hand whisk, whisk egg yolks and sugar till colour turn lightly.
2) Add salt, milk, oil, smashed banana (with lemon & essence added)
3) Add in Set (B) and mix well
4) Used another clean bowl, whipped the egg whites till bubbly and add in the sugar. Whipped till stiff peak
5) Fold in 1/3 of the whites into (3) and mixed well. Fold in the remaining whites till incorporated.
6) Bang the pan to remove trap air
7) Bake the cake at lower rack. When top begins to brown use a baking paper and loosely cover it

Baking Lesson

White Fruit Cake. Instead of making it into loaf, Mr Goh make use of muffin cup.

Orange Mousse cake. See how the side of the cake was done. Mini swiss roll was used. To make the cake smaller and fits into the ring, simply cut the cake into half and slice off @ 1 cm.
Blueberry Crumble Pie. The filling can be replaced with apple or strawberry. Chocolate Mousse Cake. See the first left picture? This is how the piped chocolate is paste around the cake. A point to note is the piped chocolate should not be left too long @ 2-3mins to set in the fridge before coating it on the cake else it will break easily. The same technique can be used on cartoon cake i.e to outline the cartoon using melted chocolate. Thereafter lay over the cake and filled with piping gel.

Fresh Strawberry Jelly


The supermarket is having offer over the weekends. Grabbed few boxes. Very sweet and kind of ripe so can't keep too long in the fridge. Decided to make Jelly then........I used the plastic mould I have bought long ago from DIY. Finally get to use the fish mould. It looks very much like koi and gold fish.

Steamed Pumpkin Kueh

J bought a pumpkin and told me that its not 'sweet' enough. Hence using the same recipe steam this kueh again. Serve with sweet dark sauce and Chilli. Not too bad!

Hazelnut Macarons


I still have 2 packets (Hazelnut & Pistachio) prepacked of Macarons ingredients left in the fridge. I just need to add castor sugar and egg whites. I didn't bother to sieve the grind ingredients again. Lucky it still turn out good. Now I'm only left with Pistachio to 'play' with. Its not a bad idea to prepack the grind nuts for a lazy person like me, save me lots of washing....

Fruit Flan again



Yes Furit flan again. As I have promise Avrem that I will bake one for him since he didn't get to eat my first fruit flan. Hope he will like what mummy have bake for him.

Banana Chocolate Chiffon


I used the Banana Chiffon cake recipe but double the amount since I'm using a bigger tube pan. Simply just add chocolate powder to make the chocolate batter. I have under bake this cake on the top portion. Too eager to place the foil on the top while baking hence preventing the heat from reaching the cake. Taste more like a sponge cake than a chiffon.
